I love quick, inexpensive, nutritious meals like this one. Even my kids think zucchini is tastier than pasta, and it is so much better for them. Zucchini is an excellent source of manganese, which our body uses to protect our cells from free-radical damage, keep our bones strong, keep our blood sugar levels normal, and support our thyroid glands. (Thyroid medication is the most prescribed medication in the nation!)
Zucchini is also high in magnesium, which the body uses to help muscles relax. Ahh, relaxation. Doesn't that sound nice? Magnesium also balances our blood sugar, lowers blood pressure, and reduces headaches.
Zucchini has even more minerals to help with blood pressure and sore muscles. So, sit down to a plate piled high and enjoy some yummy goodness that your budget loves as much as you do.
